Coconut Pecan Snack Mix

Coconut Pecan Snack Mix

Ingredients

  • 2 cups rice squares cereal
  • 2 cups chopped pecans
  • 1 cup rolled oats
  • 1 cup unsweetened coconut
  • ⅓ cup honey
  • ¼ cup coconut oil
  • ½ tsp cinnamon
  • ½ tsp salt

Preparation

  1. Preheat  oven to 350°
  2. Add the rice squares cereal, chopped pecans, rolled oats, and unsweetened coconut to a bowl.
  3. In a small saucepan over medium heat, add honey, coconut oil, cinnamon, and salt.
  4. Stir until the mixture starts to boil then pour it over the snack mix and stir until well combined.
  5. Transfer to a baking sheet and bake for 8-10 minutes. Enjoy!
