Ingredients

  • 10 phyllo dough sheets
  • 1/2 cup clarified butter
  • 1 cup granulated sugar
  • 1/4 water
  • 6 tbsp butter, cut into cubes
  • 1/2 cup heavy cream
  • 1/2 cup pecan pieces
  • 1/2 cup whole pecans
  • 1/4 cup pecan meal
  • 2 tbsp cinnamon, ground
  • 1 cup whipped cream

Preparation

  1. Preheat oven to 350℉.
  2. Lay out the 10 phyllo dough sheets on top of each other. Cut into 4” circles. Brush with clarified butter. Place circles onto a baking sheet lined with a silicon mat. Place another silicon mat on top of it. And another baking sheet on top of that. Bake for 10-12 minutes.
  3. In a heavy bottomed pan, add the sugar and water. Cook over high heat, stirring constantly. Once the sugar has melted and there aren’t any more crystals, add the heavy cream stirring constantly. Add the butter a few cubes at a time while stirring. Once the caramel is smooth, add the pecan pieces.
  4. In a saute pan, add the pecan halves, pecan meal, and cinnamon. Toast until fragrant and toss together in a mixing bowl.
  5. Layer baked phyllo circles with whipped cream, caramel, and top it with whipped cream and spiced pecans.
