Pecan Date Energy Bites

Pecan Date Energy Bites

Ingredients

  • 1 ¼ cups pitted dates
  • ½ cup of whole pecans
  • ¼ cup of finely chopped pecans
  • 1 teaspoon of vanilla extract
  • ½ teaspoon of ground cinnamon
  • ¼ teaspoon of kosher salt
  • 2 tablespoons of vanilla protein powder
  • ¼ cup honey

Preparation

  1. Add dates, whole pecans, vanilla protein powder, vanilla extract, cinnamon, kosher salt, and honey to the food processor. Pulse until ingredients are combined, and a sticky paste forms. 
  2. Roll the mixture into small, bite-sized balls.
  3. Roll the balls in the crushed pecans.
  4. Place the balls on a plate or lined tray and chill in the refrigerator for 15-20 minutes to allow them to firm up.
  5. Enjoy right away or store leftovers for up to 3 days in the refrigerator.
