Warm Pecan Snack Mix with Rosemary

Ingredients:

  • 1 cup pecan halves
  • 1 cup rice squares cereal (use flavor(s) of choice, such as wheat or cinnamon)
  • ½ cup pretzels
  • ½ cup cheesy crackers
  • 2 sprigs fresh rosemary
  • 2 tablespoons unsalted butter
  • 1 tablespoon brown sugar
  • 1 ½ tablespoons pure maple syrup
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground nutmeg
  • ½ cup dried cranberries

Process:

  1. To a large, microwave-safe bowl, add the pecans, rice squares cereal, pretzels, cheesy crackers and fresh rosemary. To a small microwave-safe bowl, add the butter, brown sugar, maple syrup, salt, & nutmeg. Microwave the butter mixture 1-2 minutes, until melted, then pour over the dry mix. Toss well to combine.
  2. Microwave the snack mix in 45-second intervals, about 4-5 intervals total, until the mix is fragrant, golden, & toasty. If you prefer to use your oven, toast at 250 degrees F for 1 hour, tossing the mix every 15 minutes.
  3. Stir in cranberries & enjoy warm.
