Pecan Adobo Trail Mix

A Filipino twist on your classic trail mix! Roasted pecans with adobo-inspired seasoning, tossed with sweet and crunchy favorites like banana chips and dried mango.

Pecan Adobo Trail Mix

Ingredients

  • For the Pecans:
  •  2 cups raw pecan halves
  • 2 tablespoons soy sauce
  • 1 tablespoon white vinegar
  • 1 teaspoon garlic powder
  • 1 tablespoon brown sugar
  • Trail Mix Add-ins:
  • 1 cup banana chips
  • 1⁄2 cup dried mango, chopped
  • 1⁄4 cup crispy garlic bits (store-bought or homemade)

Preparation

  1. Preheat the oven to 325°F (160°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix soy sauce, vinegar, garlic powder, brown sugar, and olive oil (if using). Add pecans to the bowl and toss until well coated.
  3. Spread pecans in a single layer on the baking sheet. Roast for 15–18 minutes, stirring halfway through. Keep an eye on them so they don’t burn.
  4. Let cool completely—they’ll crisp up as they cool.
  5. In a large bowl, combine the roasted pecans, banana chips, chopped dried mango, and crispy garlic bits. Toss everything together.
  6. Store in an airtight container or divide into snack-sized ziplock bags for hiking or on-the-go munching!
