Candied Pecan Croissants

Buttery Croissants filled with a crunchy candied pecan filling, topped with slivered pralines, and dusted with powdered sugar.

Candied Pecan Croissants

Ingredients

  • ½ cup – butter 
  • ½ cup – sugar 
  • ½ cup – pecan flour 
  • ¼ cup – all-purpose flour 
  • ½ tsp – salt 
  • 1 ea – large egg 
  • 1 ½ tsp – natural pecan extract 
  • 3 Tbsp – pecan butter 
  • 10 ea – day old croissants 
  • 1 cup – candied pecans, sliced 
  • Powdered sugar as needed for garnsih

Preparation

  1. Preheat oven to 375F
  2. In a stand mixer, cream the butter, pecan butter, and sugar until smooth.
  3. Add egg, salt, and pecan extract and mix until incorporated.
  4. At a low speed, slowly pour in the pecan flour and all-purpose flour until a smooth paste forms.
  5. Cut croissants in half and use a spatula to spread 2 Tbsp of the filling on the inside.
  6. Add about half of the sliced candied pecans on top of the filling.
  7. Place the top half back on and spread 1 Tbsp of filling on top of the croissants, place on a baking tray.
  8. Sprinkle evenly with the sliced candied pecans and bake for 12-15 minutes, until the filling is set, and tops are golden brown.
  9. Dust the tops with powdered sugar and serve.
